Baked Cinnamon Donut Holes

Yield about 15 donut holes (mini muffin pan)

Ingredients

For the cinnamon holes

1 1/3 cups all purpose flour

1/4 teaspoon baking soda

3/4 teaspoon baking powder

1/4 teaspoon salt

1/8 teaspoon cinnamon

1/4 cup vegetable oil

1/4 cup white granulated sugar

3 tablespoons light brown sugar

1 large egg, room temperature

1/2 cup milk

1 teaspoon vanilla extract

For the cinnamon coating

4 tablespoons melted butter

3/4 cup white granulated sugar

2 teaspoons cinnamon

Directions

For the donut holes

1.- Preheat oven to 400°F. Spray mini muffin pans with nonstick cooking spray and set aside.

2.- In a bowl mix flour, baking powder, baking soda, cinnamon and salt. Set aside.

3.- In another bowl mix sugars and oil. Then, add egg and vanilla, mix. Add half of the dry ingredients mixture. Add milk. Add the other half of the dry ingredients mixture. Mix. It will look a bit lumpy and that’s ok.

4.- Fill mini muffin pan 3/4 full.

5.- Bake for about 9-11minutes. First 5 minutes 400 F. Then turn down the heat to 350 F and finish baking for another 5-6 minutes.

For the cinnamon sugar coating

1.- In a small bowl mix sugar and cinnamon. Set aside.

2.- While the donut holes are still warm brush them with the melted butter and then roll them into the cinnamon sugar mix. Set aside. Do not wait for the donut holes to be all cooled off because the cinnamon mixture won’t stick.
