Chocolate Chip Skillet Cookie

Every Sunday night my husband and I like to watch a show called “90 day fiancée” . It’s about American citizens getting married with foreigners, it’s interesting, funny and full of drama. Watching all these couples dealing with distance, family drama, etc. is entertaining . If you want to give this show a try, you can find it on TLC network.

So, last night before watching the show, my husband told me that he was craving a skillet cookie and I made his wish come true lol.

Here is my recipe for 2 medium size chocolate chip skillet cookies. I bought my skillets at HomeGoods a long time ago, but I guess you can find them at any store like Walmart, Target, Ross or even online.

These treat is perfect for date night, movie night or anytime. Just add a big scoop of vanilla ice cream and indulge!

Let’s start with the recipe.

Yield 2 skillet cookies ( I shared one with my husband and it was the right amount, but you can eat a whole one if you want to)

Ingredients

12 tablespoons all-purpose flour

1/4 teaspoon baking soda

1/4 teaspoon salt

4 tablespoons unsalted butter, at room temperature

4 tablespoons white granulated sugar

4 tablespoons light brown sugar

1 egg, room temperature

1/2 teaspoon vanilla extract

3/4 cup – 1 cup chocolate chips, chocolate chunks, pecans (the amount you want)

Extra: Vanilla ice cream, chocolate fudge

Directions

1.- Preheat oven to 375 F. Grease your skillets with canola spray or lightly grease them with butter. Set aside.

2.- In a small bowl, mix flour, baking soda and salt. Set aside.

3.- In a bowl of an electric mixer, beat butter for a couple of minutes. Then, add both sugar and mix well for 2 minutes until light and fluffy. Add in egg, mix for 30 seconds. Add vanilla, mix for 20 seconds.

4.- Add the dry ingredients to the butter-sugar mixture (low speed) and mix well until you don’t see any leftover flour.

5.- Add in chocolate chips, chunks and pecans (also, low speed).

6.- Divide the cookie dough between your 2 skillets. Place both skillets on a baking sheet and bake for about 20 minutes.

7.- Using an oven mitt, take the baking sheet out of the oven and place the skillets on the top of a cooling rack. Let them cool for a couple of minutes.

8.- You can add ice cream, chocolate fudge and extra nuts on the top. Serve and enjoy.

Please, be careful when handling the skillets because they are very hot. Always use an oven mitt or a kitchen towel.
