Flourless Chocolate Cake

I tried to bake with almond flour/meal a couple of times but I did not like the result. Sometimes it was underbake and others I did not like the texture at all.

I finally came out with this version of chocolate cake made with almond flour which is gluten free and tastes delicious. You can add a scoop of ice cream on the side and you’ll thank me for that.

Let’s start with the recipe.

Ingredients

1 1/2 cups dark chocolate, chopped. Use good quality chocolate. Do not use chocolate chips.

1 cup unsalted butter, melted

3/4 cup white granulated sugar

3 large eggs at room temperature

1 1/2 teaspoons vanilla extract

1/4 cup cocoa powder

1/2 tsp baking powder

2 cups almond flour

*If you have almond meal but not almond flour, you can use it too. The difference between both of them is that almond meal might contain some skins.

Directions

1.-Preheat oven to 350 F.

2.- Grease and line the bottom of an 8 inch round pan (with parchment paper).

3.- In a bowl, mix cocoa powder, baking powder and almond flour. Set aside.

4.- In a microwave safe bowl melt the chocolate with butter. Let it cool.

5.- Whisk in sugar. Add eggs one by one. Keep whisking. Add vanilla and mix well until everything is combined.

6.- Add dry ingredients mixture and mix until just combined. Do not overmix.

7.- Pour batter into prepared pan and bake and bake for about 30-40 minutes or until the top has a thin crust and toothpick comes out clean.

8.- Let it cool completely. You can dust some cocoa powder on the top . Serve with strawberries, ice cream or a dollop of whipped cream.
