Healthier Chocolate Cake

Happy Monday! This “healthier” chocolate cake is perfect if you are a chocolate lover like me. It will make you feel less guilty while digging into this delicious cake. This “sponge” does not have flour or any kind of fat (butter/oil). I use sweet potatoes, oat bran and apple sauce. Also, the frosting doesn’t have any butter, just sweet potatoes, good quality chocolate and honey.

Let’s start with the recipe!

Yield 2 pans (8-8 1/2 inch). Make both layers because they are thin.

Ingredients

For the chocolate cake

2 medium size sweet potatoes (raw)

3/4 cup of cocoa powder or cacao powder

2 large eggs, room temperature

1/2 honey

1/2 light brown sugar

1/2 unsweetened apple sauce

1/2 cup of oat bran

1 teaspoon vanilla extract

1 teaspoons baking soda

1 teaspoon baking powder

3/4 teaspoon salt

3/4 teaspoon ground cinnamon

For the chocolate frosting

2-3 medium size sweet potatoes, raw

1/4 cup honey

200 grams of bittersweet chocolate

2 tablespoons cocoa powder or cacao powder

To decorate

dark chocolate chips or sprinkles

Directions

For the cake:

1.- Preheat oven to 350 F . Butter the bottom and side of of your cake pans. Also line the bottoms of each pan with parchment paper.

2.-Shred the raw sweet potatoes (I used a food processor). You have to get 2 full cups of shredded sweet potatoes.

3.-If you are using a food processor, just leave the shredded sweet potatoes in the bowl of the food processor and start adding the rest of the ingredients. Add oat bran, apple sauce, eggs. Add honey, light brown sugar,cinnamon, vanilla. Add cocoa powder/cacao powder. Mix everything.

4.- Finally, you’ll add baking soda, baking powder and salt.

5.- Pour batter into the 2 pans. Bake for about 25-30 minutes. Let the cakes cool completely on wire racks.

For the frosting:

1.- While the cake is baking. Cook your sweet potatoes in a pan with water until they are tender. Don’t forget to peel them.

2.-Melt bittersweet chocolate in the microwave. Be careful to not burn it.

3.-When ready to make the frosting. Add the warm sweet potatoes into the bowl of the food processor. Add honey, cocoa powder and melted chocolate. Mix everything until smooth.

4.- Wait for your frosting to cool off and then frost your cake.

5.- Place one cake layer on a dish and spread some frosting on the top. Place the second layer on the top and frost the whole cake. You can decorate with sprinkles or dark chocolate chips. Also, you can add berries on the side. Enjoy!!
