Healthy Chocolate Raspberry Muffins

Happy Monday! How is everyone doing? I’ve seen a lot of people trying to eat healthier this month so I thought I should post a recipe that has chocolate, fresh fruit and does not need refined sugar.

These muffins are soft made with cocoa powder, flour, coconut oil, almond milk and I’m using date syrup to sweeten them up.

Let’s start with the recipe.

Yield 6 regular size muffins. You can double the ingredients for a bigger batch

Ingredients

3/4 cup all-purpose flour

1/4 cup cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

1/3 cup almond milk or any other milk you prefer

1 tablespoon white vinegar

2 tablespoons plain yogurt

3 tablespoons coconut oil, melted

1/2 cup date syrup. I used this one

You can add more syrup if you want to

2 teaspoons vanilla extract

3/4 cup fresh raspberries

Directions

1.- Preheat oven to 350 F. Line a muffin pan with paper liners. Set aside.

2.- In a small bowl mix flour, cocoa powder, baking powder and salt. Set aside.

3.- In another bowl, mix milk and white vinegar. Let this mixture sit for about 5 minutes.

4.- After 5 minutes add yogurt, coconut oil, vanilla extract and date syrup. Mix until everything is well combined.

5.- Mix dry and wet ingredients until you don’t see any leftover flour.

6.- Fold in raspberries.

7.- Pour batter into your prepared muffin pan and bake for about 14-16 minutes or until a toothpick inserted comes out clean.
