Peanut Butter Cookies With Maple Glaze

It’s Christmas time (because Mariah Carey says so… lol) so I’m starting my Holiday baking with cookies that I love to have when I make my cookie boxes for Christmas. These cookies have been a hit during the years and I always have people on social media asking for the recipe, that is why I just made them so I can create a reel (video) for Instagram so you can all see how easy is to make them.

Let me tell you about this cookie… My husband (Steve)  gives me great ideas of different things to bake. One day he said: “Why don’t you make a Peanut Butter Cookie with a Maple Glaze”? I was like … mmm.. that might work… but I had a doubt about how to make this glaze… it had to be a glaze that kinda gets a bit hard so it is easy to eat and does’t make a mess, right? Oh well.. I gave it a try and the result was perfect.

If you would like to watch how I made these cookies, don’t forget to visit me on Instagram @pastry_tales

Let’s start with the recipe.

Makes about 2 dozen cookies

Ingredients

For the peanut butter cookie

  • 1/2 cup unsalted butter at room temperature
  • 1/2 cup white granulated sugar
  • 1/2 cup  packed light brown sugar
  • 1/2 cup  creamy peanut butter
  • 1  large egg at room temperature
  • 1 1/4 cups  all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • ¼ cup unsalted butter
  • ¼ cup maple syrup
  • 1 tsp maple extract
  • 1¼ cup SIFTED powdered sugar

Directions:

 Notes:

-If you are a bacon lover, you can sprinkle some bacon bits before the glaze is all set.

-You can also decorate with sprinkles but add them quick right after you add the glaze on top of the cookie.

1 1/4 cups  all purpose flour
      3/4 teaspoon baking soda
      1/2 teaspoon baking powder

2.-  In a separate bowl  whisk together the dry ingredients: flour, baking soda, baking powder and salt.
3.- Stir the dry ingredients into the sugar butter mixture and mix well.
4.- CHILL the dough: Wrap dough in plastic and refrigerate for about 2-3 hours.
      5.- Preheat oven to 375°F (190°C).
6.-  Shape the dough into 1 1/4 inch balls. Place the balls of dough about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake it for 10 min or until cookies begin to brown.
7.- Let the cookies completely cool before putting the glaze on them.
      Maple Glaze
      Ingredients:
      ¼ cup unsalted butter
¼ cup maple syrup (I love the Trader Joe’s one)
      1 tsp maple extract
      1¼ cup SIFTED  powdered sugar
      2 Tablespoons milk
      Directions:
In a small saucepan heat butter and maple syrup together until butter is melted and ingredients are combined.
      Stir in maple extract.
Whisk in powdered sugar ⅓ cup at a time until full incorporated. Add milk one teaspoon at a time until desired consistency is achieved ( I don’t like  runny glaze so watch out how much milk you use)
Dip cooled cookies in glaze and return to cooling rack.
Let glaze set for at least an hour and then serve.

-This cookie pairs very good with a nice cup of tea/coffee or a sweet wine.

  7. Tania says:

My husband wants to know if the glaze could be converted to a peanut butter glaze, if so how?
I’ll have to do both glazes if it is.

    • SandraWidick says:

Hi Tania ! You can make a peanut butter glaze… I would suggest this: Creamy peanut butter, sifted powdered sugar and some water. Mix the creamy peanut butter with the sugar and add some water based how thick you want it. Hope this helps. And yes, make both glazes because the maple one is sooo good!
