Mango Pie

Happy Friday friends! Mangoes are going to be in full season soon and making a dessert with them is a special treat because they are delicious! California is getting hotter and hotter so I thought it was a good time to get some mangoes and make a dessert that doesn’t need the oven so much.

This pie has 2 parts:

-The crust is made with animal crackers, butter and sugar. You bake the crust for a little bit and you let it cool.

-Then, you make the filling with mango puree, sweetened condensed milk, unflavored gelatin and water. You don’t bake this filling. It just needs to set in the fridge for some hours or overnight.

Yield one 9 inch pie dish (You can double the ingredients if you want to make 2 pies)

Ingredients

For the crust

140 grams ground animal cracker crumbs

6 tablespoons melted unsalted butter

3 tablespoons white granulated sugar

For the filling

2 cups mango puree (from fresh mangoes)

3/4 can sweetened condensed milk

14 grams of unflavored gelatin (2 small packets)

3/4 cup cold water

Directions

For the crust

1.- Grease your pie pan with butter (just lightly grease). This will help the crust to not stick to the pan when you cut the slices.

2.- In a bowl, mix cookie crumbs, sugar and butter. Mix well.

3.- Pour the cookie mix into a pie pan. Press down very well so the crumbs are compact as much as possible (bottom and sides).

4.- Transfer the crust to the freezer and chill for 15 minutes. Heat oven to 325F.

5.- After 15 minutes, place the crust into the oven and bake it for 15 minutes.

6.- Take it out from the oven and let it cool completly.

For the filling

1.- In a measurement cup pour the water. Sprinkle the unflavored gelatin on the top. Let it bloom for 5 minutes. Then, heat this bowl in the microwave (high) for 1 minute. Use a fork to mix very well and let it cool for a couple of minutes. Be sure everything is well dissolved.

2.- In a blender, mix the mango puree and condensed milk. Mix really well until everything is well combined. Using a sieve add the gelatin into the blender. Sieve will help you to catch any chunk of gelatin that did not dissolve. Mix well.

3.- Pour the filling into the cooled crust. Place the pie into the fridge for about 6 hours or overnight. I recomend overnigh.

Slice and serve! You can decorate with sliced mangoes or whipped cream.
