Molten Chocolate Lava Cakes

Happy Sunday! Hope everyone is doing great. This week has been a slow one for me, I had a big bad migraine that bothered me for a couple of days. I don’t get migraines very often but last Wednesday I felt like a truck ran over me. I get those migraines where your eyesight gets weird and you vomit a lot. I felt better by Friday so I’m trying to enjoy the weekend with my husband.

Once in a while I feel to make just a small quick dessert for Steve (my hubby) and me… like these molten chocolate lava cakes. I made them for movie night, really easy to make and delicious. You can also add a scoop of vanilla ice cream.

Let’s start with the recipe!

Ingredients

1/4 cup unsalted butter

2 ounces semi-sweet chocolate, chopped

1/2 cup powdered sugar

1 large egg, room temperature

1 egg yolk, room temperature

3/4 teaspoon vanilla extract

1/4 cup all purpose flour

1/2 teaspoon espresso powder (optional but recommended)

Directions

1.- Preheat oven to 425 F. Spray two 6 ounce ramekins well with cooking spray and place them on a baking sheet. Set aside. I used heart shaped ramekins.

2.- In a microwave safe bowl, add butter and chocolate. Microwave it for about 4 minutes BUT check the mixture every 60 seconds to make sure you don’t burn the chocolate. I usually set my microwave to Power Level 7. It has to be melted and smooth.

Remove from the microwave and whisk in the powdered sugar until well combined. Add in the egg, yolk and vanilla.

3.-Finally, add in flour and espresso powder (if using). Mix until just combined. Do not over mix the batter.

4.- Dive batter in two prepared ramekins. Bake for about 12-14 minutes or until the edges are firm but the center is slightly soft.

5.- Remove from the oven and allow to cool for 1 minute. Carefully invert each ramekin onto a plate and serve!
