Nutella Banana Bread

I love making quick breads and this one is to die for! The combination of banana and Nutella is the best! Also, I’m using brown butter for this recipe which gives a nice extra kick of flavor to this bread. This is perfect for your morning coffee or just like a snack. Easy to make and you don’t need a lot of ingredients.

Let’s start with the recipe.

Yield 1 loaf pan

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

3/4 teaspoon salt

1/2 cup unsalted butter

3 medium size bananas, mashed

1 cup granulated sugar

2 large eggs at room temperature

1/4 cup Greek yogurt or sour cream

1 teaspoon vanilla

Nutella

Directions

1.- Preheat oven to 350 F. Flour and grease your loaf pan. Set aside.

2.- First you are going to brown your butter. You are going to melt your butter in a small sauce pan over medium heat. Using a spatula stir and stir until your butter is melted and gets a dark golden brown color and a nutty smell. This process will take a few minutes, remember to always stir because it can burn quick. Pour this brown butter into a heat proof bowl (including the browned bits) and let it cool for about 10 minutes.

3.- In a bowl mix flour, baking soda and salt. Set aside.

4.- In another bowl add your brown butter and mashed bananas, give it a mix. Then, add sugar and mix for one minute. Add yogurt keep mixing for 30 seconds. Add eggs and mix well. Add in vanilla extract and mix until everything is well combined.

5.- Mix dry ingredients with the wet ones and using a spatula or a mixer in low speed mix until you don’t see any leftover flour but be careful to not overmix.

6.- Pour half of the batter into your prepared loaf pan. Add some spoons of Nutella on top and make swirls carefully. You can use a knife or a toothpick for this. Pour the other half on top and spread it carefully, top it with more spoons with Nutella and make swirls again.

7.- Bake for about 50-60 minutes until a toothpick inserted comes out clean. If you see the top is getting too dark but it needs more cooking time, grab a piece of foil, cover it and keep baking until done.

8.- Let it cool and slice! Enjoy!
