Pumpkin Bread

I know Summer is not over yet but Fall baking season has started in my house and that is why I want to show you how to make this easy and delicious recipe for Pumpkin Bread. This loaf is a must if you are a Fall/Pumpkin lover like me.

Let’s start with the recipe.

Yield one 9 by 5 inch loaf pan

Ingredients

1 and 3/4 cups of all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon baking powder

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/4 teaspoon ground ginger

2 teaspoons ground cinnamon

*If you have pumpkin pie spice, use 2 teaspoons and do not add any cinnamon, ginger, cloves or nutmeg*

2 large eggs at room temperature

3/4 cup white granulated sugar

1/2 cup light brown sugar

1 and  1/2 cups of pumpkin puree (not pumpkin pie filling)

1/2 cup canola oil/vegetable oil

1/4 cup orange juice

optional:

1/2 cup mini semi sweet chocolate chips (or less/more if you want to)

1 cup chopped walnuts (or less/more if you want to)

Directions

1.- Preheat oven to 400F degrees. Spray 9×5 inch loaf with with non-stick spray. Set aside.

2.- You don’t need a mixer for this recipe.  In a large bowl mix all the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger and cloves OR pumpkin pie spice. Set aside.

3.- In a medium bowl whisk the eggs with the granulated and brown sugar. Mix for 2 minutes. Then, add the pumpkin puree, oil and orange juice. Mix well.

4.- Pour the wet ingredients into the dry ingredients and gently mix with a spatula. Add the chocolate chips and walnuts (if using). Mix . You might see a few lumps, so do not overmix.

5.- Pour the batter into the prepared loaf pan. You can sprinkle extra chocolate chips and/or walnuts on top.

6.- Bake the bread for 30 minutes in 400 F degrees. After 30 minutes, lower the temperature to 350 F degrees and finish baking for another 30 minutes. In total approx. an hour or until a toothpick inserted in the middle comes out with a few dry crumbs.

If you notice the top of your bread is turning too dark but it still needs baking time, grab a piece of foil and cover the top. You can do this after 40-45 minutes of baking.

7.- Let it cool completely and then cut.

Note: If you have PUMPKIN PIE SPICE at home and you don’t want to get all the spices that I mentioned on the ingredients list, just use 2 teaspoons of the pumpkin pie spice.
