Strawberry Lime Cake

Happy Monday! It’s been a couple of weeks since my last post but I’m back with this tasty recipe that is perfect for your Summer days.

Things have been fine around here but my dad lost his brother (my uncle). It was very hard for my dad to accept that his youngest brother died. It has been really sad watching my dad not accepting what is going on but a week ago he finally watched a video of the ceremony my uncle received (he was a very well known general down there in Peru) so he finally realized his brother was gone.

I’m not sure when I’ll be going back to Peru but it’s very possible that my husband and I will be traveling to Lima in December to spend the holidays with my parents. I haven’t spent Christmas with my family since I got married, so yeah, it has been a while.

Also, I was contacted by one of the producers of “The Great American Baking Show”. This producer told me I was recommended by an ex contestant (who is my follower), so she asked a lot of questions about me, my family and technical baking questions which I replied ok. She told me that I was good and to proceed to send about 30 pictures, a video and to fill the form online. After that, I haven’t heard back which is fine because I think I was not ready to be on television yet . The cool part is that I didn’t even apply online or anything, they contacted me because they liked what they saw on my social media. Maybe I’ll try to apply next year.

Anyway… Let’s talk about this recipe. It’s strawberry season so why not eating as much berries as we can, right? This loaf is packed with lime and strawberry flavor. Perfect for your morning coffee or dessert time.

Let’s start with the recipe.

Ingredients

1/2 cup vegetable oil

1 cup and 1/4 cup white granulated sugar

2 cups all purpose flour

2 eggs, room temperature

lime zest, from 1 lime

3 1/2 tablespoons fresh lime juice

1 and 1/2 teaspoon baking powder

1 teaspoon salt

3 tablespoons honey

6 tablespoons milk

6-8 strawberries, chopped

Directions

1.- Heat oven 350 F. Grease one loaf pan with butter or oil.

2.- In a bowl, mix flour, baking powder and salt. Set aside.

3.-In another bowl, mix sugar, oil, zest. Then, add milk, lime juice and honey. Add eggs and keep mixing.

4.- Add the wet ingredients into the dry ones and mix. Add chopped strawberries and mix. Please, be careful to not overmix or your bread will be dense.

Note: You can mix your strawberries in a tiny bit of flour so they don’t sink in the bottom of the pan and they can spread evenly.

5.- Pour batter into loaf pan. Sprinkle some extra white granulated sugar on the top.

6.- Bake for about 45- 55 minutes or until you insert a toothpick into the center of the loaf, it should come out clean, with no streaks of batter. A few small crumbs are ok!

Note.

If your loaf is getting too dark on the top but the inside needs to bake more, grab a piece of foil and cover the top. Keep baking until it’s done.
