Zucchini Sheet Cake With Brown Sugar Frosting

Happy Monday! I’ve heard many people say that they aren’t sure to use vegetables in their cakes/desserts and being honest I was like that too. But, I changed my mind after I discovered carrot cake. I love carrot cake with a good cream cheese frosting. I started exploring other options like pumpkin, zucchini, sweet potatoes.

So, today I’m showing you guys how to make this easy zucchini sheet cake with a tasty icing that I’m sure will be one of your favorites during this holiday season. Do you have zucchinis at home and you don’t know what to do with them? Try this recipe!

Ingredients

For the cake

2 cups all purpose flour

1 and 1/2 teaspoon ground cinnamon

1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1/2 cup vegetable oil

1/2 cup unsweetened apple sauce

2 cups granulated sugar

2 large eggs, room temperature

1/2 cup milk

2 teaspoons vanilla extract

2 cups shredded zucchini (with your hands squeeze some of the moisture so your cake isn’t soggy)

1 cup chopped toasted pecans/walnuts

For the icing

1/2 cup unsalted butter, room temperature

2/3 cup light brown sugar

1/4 teaspoon salt

1/4 cup milk

2 and 1/2 cups powdered sugar, sifted

1 and 1/2 teaspoon vanilla extract

To decorate

Extra chopped toasted pecans/walnuts OR sprinkles.

Directions

For the Cake

1.- Preheat oven to 350F Spray a 9×13 pan with cooking spray.

2.- In a bowl mix: flour, baking powder, baking soda, salt and cinnamon. Set aside.

3.- In another bowl, mix oil, apple sauce, sugar. Mix. Add eggs, milk and vanilla. Mix.

4.-Add dry ingredients mix into the wet ingredients bowl and mix slowly.

5.- Add zucchini and nuts.

6.- Bake for about 40-45 minutes.

7.- Let it cool completely before frosting.

For the icing

1.- In a saucepan, melt butter. Add light brown sugar and salt. Mix until the sugar is dissolved. Add milk and bring it to a boil. Let it cool for 10-15 minutes.

2.- In a bowl of a mixer, add the butter mixture, add the powdered sugar and mix for a couple of minutes. Add in vanilla. Mix until all is well combined.

3.- Spread the frosting over your cooled cake. Sprinkle extra toasted nuts or sprinkles.
