Summer Brownies

One of the things that I like to eat during Summer is gelatin of different flavors. I always add some fruit or milk to make it fun. Today, I decided to create this dessert which is half brownie and half strawberry jello cream. This jello cream needs just 2 ingredients and it firms up very nicely in the fridge.

Each bite will remind you of chocolate covered strawberries.

Before making this dessert, you should know that because the brownie layer will be in the fridge until serving, the texture of the brownie will be fudgy which is not bad for brownies at all.

Let’s start with the recipe.

Yield one tall rectangular pan

Ingredients

For the brownies

1/2 cup all purpose flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1/3 cup cocoa powder ( I used dark cocoa powder )

1/2 cup unsalted butter

2 large eggs

1 teaspoon vanilla extract

1 cup white granulated sugar

For the strawberry cream

1 can evaporated milk. This can has to be placed in the freezer for 3 hours at least. The texture should be like melted ice cream with some chunks of milk.

1 box of strawberry jello (6 oz)

For decoration

strawberries, sliced

Directions

For the brownie layer

1.- Preheat oven to 350 F. Grease the bottom and sides of your pan. Set your pan aside.

2.- In a medium size saucepan, melt butter. Add sugar and mix for 2 minutes. Then, let the mixture cool for 5 minutes. Add eggs and mix really well so we prevent our eggs from cooking. Add vanilla. Mix.

3.- Add cocoa powder, mix. Add flour, baking powder and salt. Mix until you don’t see any leftover flour. Mix.

4.- Pour brownie batter into prepared baking pan.

5.- Bake for 20-25 minutes.

6.- Cool completely.

For the strawberry cream

1.- Mix gelatin with one cup of boiling water. Mix well. Set aside and let it rest for 15 minutes.

2.- Add 3/4 cup super cold water and mix again.

3.- In a big bowl, pour your super cold evaporated milk and using a hand mixer or any kind of mixer you have, mix in high speed until fluffy. It will resemble soft whipping cream.

4.- Add the cold gelatin mixture to the milk little by little in a string. Always have your mixer on and keep mixing until everything looks like a pink soft foamy cream.

5.- Pour this strawberry cream on top of your cooled brownie layer. Place it in the fridge and refrigerate for an hour.

6.-Decorate the top with fresh strawberries. Slice enjoy.

Keep this dessert refrigerated until serving.
