Flourless Chocolate Cake

I tried to bake with almond flour/meal a couple of times but I did not like the result. Sometimes it was underbake and others I did not like the texture at all.

I finally came out with this version of chocolate cake made with almond flour which is gluten free and tastes delicious. You can add a scoop of ice cream on the side and you’ll thank me for that.

Ginger Cookies With Passion Fruit Filling

Happy Friday !! Most people think about ginger treats just for Christmas season BUT ginger is a great ingredient which is good for stomach problems like gas, diarrhea, nausea,etc. It also helps to reduce muscle pain and soreness. I always carry some ginger candy every time I travel by plane, it really helps my stomach and digestion.

The best brand of ginger products (in my opinion) is The Ginger People. Let’s talk about this recipe. These cookie is packed with spices like ginger, cinnamon, cloves BUT I also added crystallized ginger so we can get that warm taste we like.

About the filling… It took me a few days to decide what kind of filling I wanted for these fabulous ginger cookies. Finally, I decided to use passion fruit because I think the sweetness and tanginess of this fruit pair perfect with the spicy and warm ginger flavors.

Mini Triple Chocolate Cheesecakes

Happy September! Hope all of you are doing great. I’m counting down the days for Fall to start because I’m so tired of this Summer heat. I know California is hot most of the time but I really need a break specially when I bake.

Also, I was just told that the winner of the brand new KitchenAid mixer from last week giveaway (Instagram) received it yesterday! I hope you have a blast with it and that you share all your yummy baked goods!!

Cinnamon Pisco Cake

Happy Monday! Hope everyone had a great weekend. I’ve been pretty busy doing things with my husband plus I went to see my in-laws and had lunch with them at a pretty good Chinese restaurant. Also, I have started to decorate for Fall so that means a deep cleaning in every room of my house.

Let’s talk about Pisco. This drink is a Peruvian kind of brandy (from grapes) that is made in winemaking areas of Peru. You can drink it straight from the bottle (shots) or you can make cocktails like Pisco sour or Chilcanos (my favorite). This time, I’m incorporating Pisco in a soft vanilla cake that is perfect with a scoop of ice cream or a big dulce de leche dollop. I usually buy Pisco at Bevmo but if you can’t find it , you have the option to use regular brandy. Btw, this cake in Spanish is called “encanelado”.

S’mores Cups

Hello guys!! It’s been kinda crazy around here. On Tuesday night our Tesla car was vandalized, they broke a window and stole a laptop which was not very visible. Thing is we got a pretty good video of who did this so police is trying their best to catch these guys. I reached out to a local tv station so they came to interview my husband. I know Tesla cars are a big target but come on guys, these low life people have to be found so they can pay for what they did. On a happier note… here is the recipe for my S’mores cups. These delicious treats have a graham cracker base filled with a silky milk chocolate filling topped with mini toasted marshmallows. This is the perfect way to say goodbye to Summer time.

Lime Linzer Cookies

Happy Monday! Finally we got a little break from the heat but I don’t think it will last long enough. I’m a little sad because one of my best friends got in a motorcycle accident last Saturday and she got hurt pretty bad. Yesterday, I went to the hospital to see her and it broke my heart because it seems she won’t be able to move for a while, she has broken ribs, dislocated shoulder, hip, and other stuff. I know it could have been worse and that she’s lucky she’s alive… but it’s hard to see someone you care about in such pain. I fed her dinner because it was so hard for her to move her arms, hopefully she recovers all good. Keep her in your prayers.

On a happier note, here is the recipe for the Summer version of Linzer Cookies. When you hear the word Linzer you think about Christmas BUT this time I use lime for the filling and the cookie has vanilla flavor, they actually taste like lime pie, perfect for Summer!

If you don’t have Linzer cookie cutters, don’t worry, you can use any shape you want.

Black Forest Lover Bread

Happy Wednesday!! We got a nice Fall weather vibe last week but that didn’t last long. It’s so hot right now that it makes me feel to just hangout inside my house and not go anywhere. Hopefully I don’t get a migraine again because I think hot weather can trigger bad headaches if you are not well hydrated. I am still not used to California summer weather. In Peru the max we get is around 90’s F but over 100 F never.

This recipe is perfect for Summer because I use fresh cherries and you can find fresh cherries everywhere right now. I love black forest flavor. The combo of chocolate, cherries and whipped cream yum!! I know that making a whole black forest cake might be a little complicated but if you were craving one just like me, let me show you how to make this version which is faster and easier.

On another note, I want you to know that I’ll start posting Fall recipes very soon. August-until end of October will be all Fall recipes and I ‘ll start Christmas baking early November because I won’t be home for Christmas, will be visiting my parents in Peru. Molten Chocolate Lava Cakes

Happy Sunday! Hope everyone is doing great. This week has been a slow one for me, I had a big bad migraine that bothered me for a couple of days. I don’t get migraines very often but last Wednesday I felt like a truck ran over me. I get those migraines where your eyesight gets weird and you vomit a lot. I felt better by Friday so I’m trying to enjoy the weekend with my husband.

Once in a while I feel to make just a small quick dessert for Steve (my hubby) and me… like these molten chocolate lava cakes. I made them for movie night, really easy to make and delicious. You can also add a scoop of vanilla ice cream.

Coconut Balls (Cocadas)

Happy August!! Summer is going by so fast and I can’t wait for my favorite season to start = FALL. I will start making a list of Fall recipes that I’ll start posting in a couple of weeks, so if you have anything in mind for me to try to make, please let me know.

This recipe is another special one because my mother used to make it when I was a kid for my birthday parties. I wish I had some pictures here with me to show you the delicious spread she always had for our parties.
