Strawberry Shortcake

Yield 6-8 portions

Ingredients

For the biscuit

2 cups all purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

3/4 cup (12 tablespoons) of unsalted butte – it has to be very cold. Grate your butter into a dish or bowl and place it in the freezer for about 15 minutes.

1/2 cup buttermilk (if you don’t have buttermilk just add 1/2 teaspoon of white vinegar into regular milk and let it stand for 10 minutes)

1 large egg

1 teaspoon vanilla extract

For the egg wash

1 egg, beaten

1 and 1/2 tablespoon cold water

For extra crunch

sprinkle granulated sugar on the top

For the strawberries

1 pound strawberries (stems removed and hulled). Slice them.

2 tablespoons white granulated sugar

For the cream

3/4 cup heavy cream

2-3 tablespoons powdered sugar

3/4 teaspoons vanilla extract (I used clear vanilla)

Directions

For the biscuits

1.- Preheat oven to 400 F. Line a baking sheet with parchment paper. Set aside.

2.- In a big bowl, mix flour, baking soda, baking powder and salt. Add your cold butter (previously grated and sat in the freezer for 15 minutes). Using your hands mix it until it resembles small peas.

3.- In a measurement cup mix buttermilk, egg and vanilla. Add this mixture into your bowl with flour and butter. Using your hands, mix until its barely combined.

4.- Sprinkle some flour on a work surface and place the dough on the top. Using your hands press it down into a 3/4 inch thickness.

5.- Cut out the biscuits using a 2 1/2 inch cookie cutter (or biscuit cutter) . You’ll get 6-8 biscuits.

6.- Place the biscuits onto your prepared baking sheet and put it into the freezer for about 10 minutes.

7.- After 10 minutes, brush the egg wash on the top of each biscuit and sprinkle some sugar on the top.

8.- Bake for about 15 minutes until tall and the tops are medium golden brown.

9.- Let them cool completely before cutting in half.

For the strawberries

In a small bowl mix the strawberries with sugar. Let it sit for 30 minutes.

For the cream

In a bowl of a mixer, whip the cream for a couple of minutes. Then, add powdered sugar and vanilla extract. Whip until it reaches soft peaks.

To assembly

1.- Cut biscuits in half. Add some strawberries on the top of the lower half.

2.- Add a big dollop of cream. Place the other half of the biscuit and press lightly.

3.- Serve.

You can sprinkle some powdered sugar on the top.
