Bakery Style Apple Muffins

Happy Tuesday friends! I don’t know about you, but when it comes to store-bought muffins I always wondered what they use or do to have a nice dome and how do they make their topping (crumb).

Today, I’m showing you how to make another bakery-style muffins made with fresh apples, spices, Greek yogurt and a topping made with honey, flour, cinnamon.

I’m sure you have some ingredients already in your pantry. These are the perfect muffins to start September because Fall is just around the corner.

Yield 10-12 regular size muffins or 5 jumbo size muffins

For the topping/crumb

1/3 cup all-purpose flour

2 tablespoons white granulated sugar

2 teaspoons honey

1/4 teaspoon ground cinnamon

1 tablespoon vegetable oil

For the muffins

1 cup all-purpose flour

1 and 1/2 tablespoons baking powder

1/4 teaspoon salt

1/8 teaspoon ground nutmeg

3/4 teaspoon ground cinnamon

1 large egg at room temperature

1/2 cup white granulated sugar

1/2 cup Greek yogurt

1/4 cup vegetable oil

3/4 teaspoon vanilla extract

1 medium size apple peeled and diced . I used Granny Smith

Optional: If you like walnuts and have some, you can add them too.

For decorating

1/4 cup powdered sugar

Directions

For the topping/crumb

In a small bowl mix all the ingredients: flour, sugar, cinnamon, oil and honey. Mix with a fork until you have small crumbs. Place this bowl into the fridge until ready to use.

For the muffins

1.- Preheat oven to 400 F. Line your muffin pan with paper liners. Set aside.

2.- In a bowl mix flour, baking powder, cinnamon, nutmeg and salt. Set aside.

3.- In another bowl whisk your egg for about 1 minute. Then, add the sugar and whisk for another minute. Add yogurt, keep mixing. Add oil and vanilla. Keep mixing until everything is well combined.

4.- Mix the dry ingredients with the wet ones and when your mixture is ALMOST fully mixed add the diced apples and then keep mixing until you don’t see any leftover flour.

5.- Fill your paper liners 3/4 full. Sprinkle some of the crumb on the top.

6.- Place your muffin pan into the oven. Turn down your oven to 375 F and bake for about 25 minutes or until the top is golden and a toothpick inserted comes out with dry crumbs.

Note: Each oven works different so please check on your muffins after 20 baking time minutes.

7.- Let them cool completely and then sprinkle some powdered sugar on the top.

These muffins are the best when eaten the same day.
