Ingredients
1 and 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1 cup plus 2 tablespoons sugar
2 eggs, room temperature
1/2 cup vegetable oil
3 and 1/2 medium size bananas, mashed
1/4 cup plain Greek yoghurt
1 teaspoon vanilla extract
1 cup chopped walnuts
1/2 cup mini chocolate chips (optional)
Directions
1.- Preheat oven to 350 F. Grease a 8 by 5 loaf pan.
2.- In a medium bowl, sift flour, baking soda, salt and cinnamon. Set aside.
3.- In bowl of an electric mixer, combine eggs and sugar. Mix for about 3-4 minutes until light and fluffly.
4.- Add in oil little by little, this process should take about 1 minute.
5.- Add bananas and mix in low speed. Add yoghurt and vanilla extract. Mix until everything is well combined.
6.- With a spatula, incorporate the dry ingredients into the wet ingredients. Add in chopped walnuts and chips.
7.- Pour batter into our prepared loaf pan. You can sprinkle extra mini chocolate chips and walnuts on the top.
8.- Bake for about 60-75 minutes or until a toothpick inserted comes out clean. If you notice the top of your bread is getting too dark, grab a piece of foil and continue baking until done.
