Brownies and chocolate chip cookies are some of my favorite treats.Today, I’m showing you something different because we are going to put together these 2 desserts in a pie.
This brookie pie has a chocolate chip cookie layer and a brownie layer. This is baked in a deep pie dish.
This is an easy dessert that you can fix super quick if you want to surprise your family or if you want to make it a gift.
Also, I want to tell you that I made this dessert with a plant-based butter. This butter was gifted to me by Fora Foods and it’s called For a Butter. You can get their butter online https://forafoods.com/

Let’s start baking.
Yield one 9 inch deep pie dish
Ingredients
For the cookie layer
1 and 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
113.4 grams of unsalted butter (1 stick – 1/2 cup) at room temperature
*For this recipe, I used a plant-base butter called “For A Butter”. If you want to give it a try this is their website: https://forafoods.com/
*You can use regular butter too.
6 tablespoons white granulated sugar
6 tablespoons light brown sugar (packed)
1 teaspoon vanilla extract
1 egg at room temperature
1 cup semi-sweet chocolate chips
For the brownie layer
1/2 cup of butter (1 stick)
1 cup white granulated sugar
2 large eggs, at room temperature
1 teasppon vanilla extract
1/3 cup dark cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
Directions
For the cookie layer
1.- Get your pie dish ready. Grease the bottom and sides of your pie dish with butter. Preheat your oven to 350 F.
2.- In a small bowl mix flour, baking soda and salt. Set aside.
3.- In another bowl and using a mixer, beat the butter for 2 minutes. Then, add granulated sugar and light brown sugar and cream your ingredients for about 2-3 minutes until light and fluffy.
4.- Add egg and beat well. Add in vanilla extract and beat for another 30 seconds.
5.- Add dry ingredients and mix in low speed until everything is well combined.
6.- Add chocolate chips, mix.
7.- Pour this cookie dough into the bottom of your prepared dish and use a spatula or spoon to smooth it out.
8.- Set your pie dish aside. Now, let’s make the brownie batter.
For the brownie batter
1.- In a small saucepan, melt your butter.
2.- Remove pan from the heat and add granulated sugar. Mix well. Let it cool for 5 minutes.
3.- Add eggs and whisk really well because you don’t want your eggs to cook (the butter mixture might be still hot).
4.- Mix in vanilla extract, keep whisking.
5.- Add in cocoa powder, flour, baking powder and salt. Mix well until you don’t see any leftover flour.
6.- Pour brownie batter on top of the cookie dough and bake for about 1 hour or until a toothpick inserted in the middle comes out with a few crumbs from the brownie, a few wet crumbs is ok but not runny. If you think your brownie needs more baking time but the edges are starting to look kinda toasty, grab a piece of foil and cover the top, keep baking.
7.- Let it cool completely and then cut it like it in slices like a pie.
