Muffins are a must to have in my house. They are perfect for breakfast, coffee or like a snack. My favorite muffins are orange flavored ones.
This recipe is awesome, I’ve been make these for years and they always come out great. You can make them in a jumbo muffin pan (like I do) or a regular one.
You can add chocolate chips, dried fruit or nuts. Remember to always use fresh squeeze orange juice and zest!
Let’s start with the recipe.
Yield 6 jumbo muffins or 10-12 regular size muffins
Ingredients
2 cups all-purpose flour
1 and 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter at room temperature
1 cup granulated sugar
2 large eggs at room temperature
1/2 teaspoon vanilla extract
zest of 2 oranges
1/2 cup fresh orange juice
1/4-1/2 teaspoon orange extract (optional)
1 cup dried cranberries, chocolate chips, nuts, dried fruit, anything you want
2-3 tablespoons granulated sugar to sprinkle on top
Directions
Preheat oven to 375 F. Line your muffin pan with paper cups/liners.
1.- In a small bowl mix flour, baking powder, salt. Set aside.
2.- In another bowl and using an electric mixer, cream your butter for 2 minutes. Then, add sugar and mix both ingredients for 2-3 minutes in medium-high speed until light and fluffly.
3.- Add in eggs one by one, mixing well after each addition. Add orange zest, vanilla extract and orange extract (if using). Keep mixing in medium speed.
4.- Add 1/3 of dry ingredients and mix in low speed. Mix in half of the juice . Add in another third of the dry ingredients and mix. Add the other half of the orange juice, mix. Add the last third of your dry ingredients and mix in low speed until everything is well combined. Be careful to not overmix or your muffins will be very dense.
5.- Finally add any dried fruit, nuts or chips. Use a spatula to fold them in.
6.- Fill each cupcake liner 3/4 full. Sprinkle some granulated sugar on top.
7.- Bake for 28-30 minutes or until a toothpick inserted comes out clean and the tops are golden brown.
Let them cool completely or you can enjoy them while they are still warm!
