Key Lime Pie

Hi friends! I hope you are all doing good. Last week I bought a big bag of key limes, I used some for my key lime pie cupcakes but I still had a lot left so I decided to bake a pie, a recipe that my mom taught me when I was a kid.

This pie is super special to me, I always bake it when I want to find comfort in food. Last week has been mentally exhausting for me, my dad’s health has not been very good, his nurse left and my brother had to take my dad to ER (something not very good right now in Peru because covid cases are still high and we were told that if he got hospitalized it was very probably that he get covid and put him in risk). Anyway, it has been nerve wracking in any way you can think of but finally we found a new nurse for dad and she will start working this weekend. I wish I can travel to see them like I always do BUT I decided not to travel until I get fully vaccinated.

I hope your week is going better than mine and that if you feel down for some reason, go to your kitchen and bake this special pie! Thank you to everyone who sent me a message asking how my dad was doing, I really appreciate it!

Key Lime Pie Cupcakes

Key lime, lime or lemon pies are my favorite desserts. I have been making them since I was a teenager. My mom used to make them all the time so I learned from her.

Today, I am showing you how to make key lime pie but into cupcakes! These cupcakes have a crust, filling and frosting just like a pie! They taste amazing!

Chocolate Wine Lava Cakes

As you might know, I live in Northern California so we have many wineries around us (plus Napa Valley is very close to where I live). I really never like wine when I lived in Peru, if I had a drink was mostly a cocktail or something made with pisco which is a grape based drink that you can mix with sodas or juice. Anyway, after I moved to California, my husband and I began exploring some wineries in the area and I started enjoying wine tastings and visiting wineries.

Last week I went to Trader Joe’s and I got a couple of inexpensive wines, we opened one for my husband’s birthday but we did not finished it so I decided to add it to this bake. I wanted something easy to make with not so many leftovers (I still have some of my husband’s birthday cake).

These chocolate lava cakes have wine, a touch of cinnamon and the perfect amount of dry ingredients to make sure you achieve the gooey center that we all look when eating lava cakes. Perfect treat for date night or just to indulge yourself.

Funfetti Cake

Every year I make my husband’s birthday cake and this year he requested a funfetti cake. Vanilla cake with sprinkles covered with chocolate buttercream.

This recipe makes three layers (I’m using 6-inch cake pans) perfect size if you don’t have a lot of people at home. This cake can give about 6-8 servings.

Dulce De Leche Cheesecake Bars

Cheesecake is one of the most popular and delicious desserts so I decided to create a version where I use homemade dulce de leche. This time I am using the baking method where the only ingredient you need to make dulce de leche is one can of sweetened condensed milk by Magnolia.

These bars have 3 layers: cookie crust layer made with graham crackers, dulce de leche cheesecake, and chocolate ganache.

Chocolate Strawberry Brownies

Happy Monday!! I hope you all had a great Valentine’s Day weekend. We really didn’t have big plans (like other years), we ordered pizza for dinner and watched 90 day fiancé (one of our favorite Sunday shows). We did not exchange gifts or cards like other years either, it was more like a relaxing day for us.

This recipe is for the collab that I’m hosting today on Instagram #datenightdesserts so if you follow me there, don’t forget to check the hashtag so you can see all the delicious treats that my talented friends made.

And because the theme is “date night” I decided to make one of things that we like to eat as dessert : brownies, but I added something new to give a different “kick” to the flavor, I used freeze dried strawberries.

These brownies are fudgy and they are covered with a smooth chocolate ganache.

Red Velvet Impossible Cake

Happy February! I know it’s been a while since my last post but life got a little busy with some family issues. The 2 caregivers of my parents in Peru decided to leave and they gave my brother and I a super short notice. This is hard because Peru is suffering a bad Covid second wave and finding people to work as caregivers is very hard right now. I had no idea that they were planning to quit but I guess the stress of being inside the house for so long was mentally tired for them so I kind of understand why they want to leave.

Thankfully, my best friend in Peru recommended a lady who worked with her grandparents for many years so now we have a new lady working with my parents and it seems is going well specially with mom because of her dementia. On the other hand, we haven’t found a new nurse for dad yet so hopefully we can find someone soon.

Healthy Chocolate Raspberry Muffins

Happy Monday! How is everyone doing? I’ve seen a lot of people trying to eat healthier this month so I thought I should post a recipe that has chocolate, fresh fruit and does not need refined sugar.

These muffins are soft made with cocoa powder, flour, coconut oil, almond milk and I’m using date syrup to sweeten them up.

Lemon Poppy Seed Bread

My lemon tree is blooming so I decided to remake my lemon bread recipe. This loaf is packed with fresh lemon juice and zest. The crumb is really nice and soft. I made a lemon icing to spread on top and believe me I think this is better than the Starbucks one because it is less greasy and the glaze looks and tastes better.

Guess what! Tomorrow is my birthday and for the first time ever, I have zero plans because covid of course. I decided to not bake my own cake so I’ll go to a bakery to get one. 38 years here I come!

Churro Alfajores

If you visit my blog for a while, you know I enjoy baking alfajores and I’m always trying to come out with new flavors. Alfajores are made with regular flour, cornstarch, vanilla extract, egg yolks and other simple ingredients and today I decided to add ground cinnamon and nutmeg to create a churro flavor version. They are filled with delicious dulce de leche (which is a milk-based caramel) and coated in a cinnamon-sugar mixture.
