Gingerbread Muffins

It has been really cold here in Northern California and all I can think of is wearing fuzzy socks, Christmas decorations, gingerbread and peppermint mocha lattes. Also, I’m feeling a little homesick. My plan this year was to travel to Peru and spend the holidays with my parents but because COVID I can’t do that anymore. Anyway, I will start decorating soon because that cheers me up a lot plus baking for Christmas season is something that I love.

Here is a quick and easy recipe for gingerbread muffins that you can make at home. Very soft muffins made with spices like ginger, cloves and cinnamon. I also added one of my favorite ingredients to use during the holidays: crystallized ginger chips. The glaze is a vanilla drizzle that will make them look more festive.

Bizcochitos

I am very excited because this is my first holiday cookie recipe of the year. Bizcochitos are very popular in New Mexico during Christmas time. They were originally created by the first Spanish colonists of New Mexico as a way of expressing the local culture. These crispy cookies consist of butter or lard, sugar, orange, flour, baking powder, and spices such as cinnamon and anise.

These are the perfect cookies to start a cheerful holiday baking plus your house will smell amazzzing!!

Argentinian Alfajores (Marplatenses)

Alfajores are very popular in South America and each country has their own favorite version. Theses alfajores are originally from Mar de la Plata- Argentina and sold everywhere. You can even find these type of alfajores in stores and airports all over South America. Havanna brand sells them and they are one of the things I always buy when I go to Peru.

I have tested this recipe a couple of times and finally I am very happy with the results and that is why I’m sharing this recipe with you.

Spooky Red Velvet Cupcakes

Dulce de Leche Pumpkin Cupcakes

Dulce de leche is a very popular treat in South America. It is a milk-based caramel. You can find it at the stores (my favorite brand La Lechera) or you can make your own boiling a can of condensed milk but this process takes a bit of your time so I totally recommend buying it at the store.

And because pumpkin and dulce de leche are 2 of my favorite things, I had to put them together in a cupcake.

Pumpkin Coffee Cake

Happy Tuesday friends! I am a bit sad because this is one of my last pumpkin recipes of the year. I have baked with pumpkin for 2 months now so I think I have a good amount of pumpkin recipes for you to choose from. Starting November, you will find Christmas recipes.

But for now, let’s talk about this incredible easy coffee cake. The cake part is made with browned butter which adds a special nutty flavor, pumpkin puree, spices, yogurt, eggs, very simple ingredients. The crumb topping is made with cinnamon, brown sugar, butter, flour, super easy. Finally, the glaze is a simple vanilla icing that is made with vanilla bean paste.

Pumpkin Spice Hot Chocolate Bombs

Happy Friday! A few days ago I saw something online that caught my eye. It was a video of someone pouring hot milk into a cup that had a chocolate ball. When the hot milk touched the chocolate ball, it exploded and delicious goodies came out! I loved the idea so I had to make them at home.

For this recipe you need a silicon mold which should be something of this size, click HERE. But, I didn’t want to wait to get one so I used an old mold that I already had, smaller, but it worked fine.

Orange Ginger Loaf

My husband is a fan of chocolate, orange and ginger combo so I decided to bake something special for him. Here is a delicious recipe for a soft quick bread that is packed with fresh orange juice, zest and crystallized ginger. The crumb of this loaf is amazing and you don’t need a lot of ingredients.

The chocolate glaze sets very nice so it won’t be messy when you slice and serve.

Hi-Hat Cupcakes

I made these cupcakes a couple of years ago but didn’t take a good picture so I decided to write a post about them (good excuse to eat delicious cupcakes).

Chocolate mini cakes made with unsweetened chocolate, yogurt and vanilla extract topped with a delicious homemade marshmallow frosting dipped in a chocolate coating. The 3 textures are amazing and work perfect together, each bite is magical so if you like chocolate and pretty treats, this recipe is for you!

Pumpkin Spice White Chocolate Cupcakes
