Brookie Pie

Brownies and chocolate chip cookies are some of my favorite treats.Today, I’m showing you something different because we are going to put together these 2 desserts in a pie.

This brookie pie has a chocolate chip cookie layer and a brownie layer. This is baked in a deep pie dish.

This is an easy dessert that you can fix super quick if you want to surprise your family or if you want to make it a gift.

Bakery Style Apple Muffins

Happy Tuesday friends! I don’t know about you, but when it comes to store-bought muffins I always wondered what they use or do to have a nice dome and how do they make their topping (crumb).

Chocolate Hazelnut Cookies Filled With Dulce de Leche

Pumpkin Bread

I know Summer is not over yet but Fall baking season has started in my house and that is why I want to show you how to make this easy and delicious recipe for Pumpkin Bread. This loaf is a must if you are a Fall/Pumpkin lover like me.

Apple Pie Cups

Apple pie is a classic dessert anywhere you go. It is generally double-crusted, with pastry both above and below the filling; the upper crust may be solid or latticed. BUT, today I’m showing you how to make mini apple pies in a regular muffin pan. They are way easier to share and serve (less mess) plus they are very fun to make.

I have made many apple pies during the years and I can tell you this crust that I’m showing you how to make in this recipe is the best one, crispy, flaky, great butter flavor, everything you need in a good crust. The filling is delicious with the right amount of spices.

Easy Cinnamon Apple Cake

Happy Friday! It has been a very hard week for our area. Northern California has many fires going on right now and we were close to evacuate. Thank GOD, we did not have to but we were all packed and ready to go, I don’t think we have ever been this close to a fire. I know some people lost their homes, my friend’s dad lost his home in the countryside area of Vacaville, CA. The sky is dark and the air is very unhealthy right now but we are very grateful that we are ok.

Now, let’s talk about this recipe. Fall baking season is my favorite season and I want to share with you this recipe that is a must in my house during Autumn. This cake is packed with cinnamon, nutmeg and chopped apples. It’s made with oil and Greek yoghurt that help to have a nice moist crumb. Also, you don’t need a mixer for this cake,

Chocolate Chip Alfajores

Happy Tuesday! It’s been so hot here in California that makes me not want to bake at all but yesterday I was craving some alfajores and I made these with a tiny bit of a twist. I added mini chocolate chips and let me tell you that it was the best idea that I could have to make my alfajores better. The chocolate chips are very good with the dulce de leche!

Pumpkin S’mores Cupcakes

Yes, you read it right … pumpkin baking season has just started in my kitchen and I thought that a great way to say “bye for now” to Summer and welcome Fall baking is with these delicious cupcakes.

These cupcakes have a graham cracker base, a light pumpkin spice cake (not heavy on spices) filled with chocolate ganache and topped with homemade marshmallow frosting that I toasted with a kitchen torch.

If you haven’t decided if you are ready for Fall yet, make these mini cakes, they are absolutely fabulous.

Pina Colada Cake

I decided to make one more tropical/fruity Summer dessert before I start with Fall baking and I thought that pineapple was the perfect candidate for this occasion. This piƱa colada cake is super easy to make and delicious. This cake combines pineapple, coconut and rum in a way that is very light and not too dense like other pineapple cakes. The icing is a smooth pineapple-rum cream cheese frosting. 

I made this cake in a 8×8 inch square pan but if you want to make a bigger cake just double the ingredients.

Sourdough Discard Banana Bread

My husband has been making sourdough bread for some months now so he asked me if I wanted to do something with the discard he had over the weekend.

What is the discard? When you make sourdough bread you have a starter that you have to feed with flour and water. When you do that, you have to take some out of the container and this is called the discard. Some people use this discard to bake stuff like quick breads, crackers, cookies, etc.

Today, I’m going to show how to use this discard when making banana bread. The result of this experiment was amazing a delicious. You can taste a tiny bit of the sourdough not that much. It also helped to increase the rise.

If you make sourdough bread at home and you want to use the discard, this recipe is for you.

If you don’t have sourdough discard, you can till make this recipe, just add 1/4 cup more milk.
