Walnut Alfajores

Alfajores are one of the most popular cookies in Peru. They are usually made with all-purpose flour and cornstarch but today I want to show you how we can replace the cornstarch part with walnuts.

They are filled with dulce de leche which is a milk-based caramel. When I make alfajores, I usually buy a dulce de leche can by La Lechera but you can make your own Dulce de Leche, the recipe for this homemade dulce de leche or manjar is in another post.

Orange Almond Cake

Orange is one of my favorite flavors when it comes to cake. In this recipe, I’m using all-purpose flour but also ground toasted almonds which gives a nice texture and flavor to the cake. I used orange zest and an organic orange extract that gives a delicious taste and aroma!

The icing is a light orange infused white chocolate ganache.

Cinnamon Bundt Cake

Happy August! For me, this means that Fall baking season has started and that my house will start to smell and look like spices, pumpkins and all Fall related things!

This cinnamon cake is very easy to make and is super delicious. It has a soft crumb and a cinnamon-sugar layer that will melt in your mouth.

Bakery Style Banana Nut Muffins

In the past, every time I saw muffins at the store I used to think that my homemade muffins were not tall enough and did not have that nice dome on the top. After many years of baking, I found out the perfect way to make my homemade muffins be as pretty as the store-bought ones and tasting better. No more flat tops!

Chaja Cake

Chaja cake is the famous lucious and naughty cake of Uruguay. Layers of sponge cake, peaches, dulce de leche , meringue and cream make this cake the perfect treat for any celebration. Might look a little bit complicated to make but if you follow all the steps of my recipe, you’ll achieve the perfect celebration cake ever! Plus, you can use canned peaches, perfect option for winter when fresh peaches aren’t available.

Carmelita Bars

Happy Friday!! Here is a recipe that I’ve been thinking to post for a while… Carmelita Bars. I describe these bars as cookies in the shape of bars. The base and topping are made with oats, pecans, flour, vanilla extract. We add layers of chocolate chunks/chips an has a caramel sauce too. If you are a fan of chocolate and caramel, this recipe is for you!!

Chocolate Bundt Cake

For me a good chocolate cake can make my day better. This classic Bundt cake is made with dark cocoa powder which is my favorite when I make chocolate desserts. I’m using butter and oil which helps the cake to achieve the right texture/crumb that a Bundt cake should have.

The icing is a light chocolate ganache that is perfect for every slice.

Blueberry Coffee Cake

Happy Tuesday! One of the reasons that I love Summer is that I can find fresh berries in any store. Love baking with fresh berries specially when I bake with blueberries. Frozen blueberries always “cry” in my cookie/cake dough/batter , I always prefer fresh for sure.

This is a recipe that anybody can make plus there is no fancy ingredients, all basic stuff that I’m sure you have at home. Always remember, the trick for a good loaf is to not overmix your batter at the end. Just mix until all the dry ingredients are well mixed in and stop mixing. Overmixing your batter will make your loaf very dry and hard as a brick.

This coffee cake is baked in a loaf pan. Packed with ground cinnamon and vanilla extract. It has a nice streusel in the middle and on the top.

It’s too hot here in California that using my oven right now is not a good idea if having my A/C on so I decided to make these mini cheesecakes that set in the fridge with the help of cold whipping cream, I’m not using jello.

Best Chocolate Chip Cookies

I’ve always been the kind of person who likes eating cookies. I think it’s my mom’s fault because she always had cookies at home when I was a kid. We really didn’t have chocolate chip cookies in Peru back in the 80’s or early 90’s until Nabisco started selling Chips Ahoy and they became one of my favorites. Mom always sent me a packet of cookies to my lunchbox and I was a happy happy girl.

Now that I make almost all the sweets I eat, specially cookies I always try to twist different things to achieve different textures and today I’ll show you how to make my favorite version so far.

These cookies are made with all-purpose flour, old fashioned oats (big flakes), quick oats (small flakes), mini chocolate chips and chocolate chunks. I think the mixture of flour with the 2 kind of oats make the perfect texture that I was looking for a long time.
