Key Lime Icebox Cake (Carlota de Limon)

Happy Tuesday!! When I was a kid I used to get together with a school friend to bake at my parents house. Of course, all the things we made were super easy , we enjoyed making this dessert that was very popular by then called Carlota de Limon.

This Summer treat has layers of Marias cookies which are thin and round cookies usually vanilla flavored. Also, the layers are made with a cream mixture of fresh key lime juice, sweetened condensed milk and evaporated milk. This is usually all you need to make this dessert BUT because I wanted it to be a little bit firm I added some unflavored gelatin, and no, it won’t be as hard a jello but it will help you to have a clean cut when you serve, specially during hot days.

Red Wine Chocolate Cherry Cake

Happy July! Cherry season is in full swing and I had a big bag of cherries to use and some leftover wine from my date night with hubby. I decided to create this easy recipe that you will love if you are a wine and chocolate fan like me.

S’mores Brownies

Happy Monday! We are about to celebrate 4th of July and S’mores are perfect to enjoy during Summer. The combo of graham crackers, chocolate and toasted marshmallows gives the most perfect bite ever. It’s rich but tasty and you want to keep eating more and more.

Dulce de Leche Angel Pie

Happy Friday! Some days ago my friends from Nielsen Massey sent me some awesome extracts and one of them is the Madagascar Bourbon Pure Vanilla Extract which I love. They asked me if I could make some kind of meringue dessert so I created this tasty dessert that is perfect for Summertime.

The crust is a baked Swiss meringue shell filled with a homemade dulce de leche (or manjar a la olla) cream. Topped with fresh strawberries.

This is a very easy recipe that you can make at home. It’s very pretty and delicious.

Strawberry Cream Naked Cake

Happy Summer!!! Let’s kick this warmer season with this delicious cake that is perfect for a birthday or any family gathering. This cake is made with egg whites making the texture of the sponge super soft.

A reduced strawberry puree is part of the cake batter, making it very fruity, perfect for Summer. The frosting is a cream made with freeze dried strawberries which will help your frosting not to be runny (fresh fruit can cause that in frostings).

Marble Cake

Happy Friday! This is one of my favorite cakes ever! It looks complicated to make, but really it is very easy! I’m giving you all the tips so you can master a nice marble effect. Also, you can watch how I made this cake on my Instagram @Pastry_Tales

For this cake I’m using butter and oil. The butter will make your cake taste amazing and the oil will help the cake to have a nice texture. I really really like how using butter and oil in the same cake recipe can give you such a nice crumb.

S’mores Mousse Cups

Summer is just around the corner and s’mores are a must in my house. I love the combo of graham crackers, chocolate and toasted marshmallows.

Yesterday, I was craving some s’mores but I didn’t want the regular kind and I did not want to turn on my oven, it was too warm yesterday. So, I decided to make s’mores cups: layers of chocolate mousse and graham crackers, topped with a homemade marshmallow frosting that I toasted with my kitchen torch. The result of this experiment is amazing.

I made a small batch, if you want to make more, just double the ingredients.

Chocolate Chip Skillet Cookie

Every Sunday night my husband and I like to watch a show called “90 day fiancĂ©e” . It’s about American citizens getting married with foreigners, it’s interesting, funny and full of drama. Watching all these couples dealing with distance, family drama, etc. is entertaining . If you want to give this show a try, you can find it on TLC network.

So, last night before watching the show, my husband told me that he was craving a skillet cookie and I made his wish come true lol.

Here is my recipe for 2 medium size chocolate chip skillet cookies. I bought my skillets at HomeGoods a long time ago, but I guess you can find them at any store like Walmart, Target, Ross or even online.

These treat is perfect for date night, movie night or anytime. Just add a big scoop of vanilla ice cream and indulge!
