Passion Fruit Tart

This recipe is perfect for Spring. Passion Fruit is a very well-known fruit in Latin America (We call it MARACUYA OR PARCHA). This tropical fruit is packed with vitamins and antioxidants, so you can add it to any meal you want!

This tart is very easy to make. First, you make a crust: I used animal crackers and it worked perfect! Second, you make the filling with passion fruit pulp or juice, eggs and condensed milk.

Tiramisu

Happy April!! I can’t believe April is here and not looking any better than March. I would like to stop watching/reading news about this virus but at the same time I want to know everything that is going on. It’s very stressful to not know when this is going to be over.

Also, I haven’t posted about this before but my little niece (daughter of one of my brothers) was just diagnosed with cancer not too long ago. It has been really hard for the whole family plus dealing with the situation in this strange virus environment makes it more scary I guess. She already had 2 brain surgeries and what she has is brain sarcoma cancer. I think I’m writing about this today because she called me on Facetime yesterday (she’s hospitalized right now due to having fever and low defenses). We laughed and played with those funny facetime filters. She told me she was wearing a wig and that kinda broke my heart. She is too little to be dealing with this. Anyway, I wanted to vent for a bit here.

Now, let’s talk about my easy Tiramisu recipe. I know many of you are cooking and baking more because of the stay at home order. Also, I know it’s really hard to find flour right now. This TIRAMISU is perfect because you just need a couple of ingredients and you do not need flour or butter!

Creme Brûlée Cupcakes

A couple of years ago my husband and I took the Napa Valley Train for Valentine’s Day. It was really nice and the food was delicious. That night I chose to have Creme Brûlée for dessert and it did not disappoint because it was absolutely tasty. Since then, I like to make it at home. Last year I made a pumpkin flavor one and it was a hit.

But, you know me. I love cake, so I had to come up with this idea of cupcakes. These soft vanilla cupcakes are filled with a silky pastry cream. On the top we’ll sprinkle some granulated sugar that will be caramelized with a kitchen torch. The result is just like a Creme Brûlée in a mini cake.

Carrot Cake

Happy Monday! I had some carrots in the fridge waiting to be used so I decided to make a carrot cake because Easter is just around the corner and I’m pretty sure that you might be already thinking about what dessert to make.

This carrot cake is soft and packed with cinnamon, carrots, pineapple, coconut and walnuts. BUT, you can use any other kind of nuts or dried fruit that you prefer or have at home.

This recipe is for 2 layers (6 inch) but if you want to make a bigger cake just double the ingredients.

Lemon Bread

Happy Sunday! How is everyone holding up? I know it’s been a couple of crazy weeks. Having a blog allows me to talk to people from all over the world and I can tell you that this virus is affecting people in ways that you can’t imagine. People loosing their jobs, old people dying, pregnant women worrying about their babies and health, cancer patients or people waiting for important surgeries are hoping to get their treatments/surgeries to be done, people dying alone and not letting their loved ones to say bye. This is a very sad time for everyone.

On my side, everything is doing ok. My husband and I are safe at home but I worry about my family in Peru. I know they are ok for now but the fact that they closed the borders (no one can get in or out the country) makes me nervous because if something happens I can’t travel to be with them. Hopefully everything comes back to normal soon. Remember that staying home is the best we can do right now.

People have been asking me for this recipe for a couple of weeks now. This lemon bread is what you need to make your quarantine better. Simple to make, tastes delicious and you might have all these ingredients in your pantry.

Chocolate Orange Cake

Happy Tuesday! Things have changed so much since the last time I posted. This CoronaVirus is affecting the whole world. I don’t think people is taking it seriously. I can see people going out with their whole family, playing at parks, etc. Hopefully it doesn’t get too bad until this country put more severe rules.

I haven’t been baking so much because it’s kinda hard to find products like flour, eggs, butter, etc. I’m trying to take care of the ingredients I have and just bake once or twice a week.

On a happier note, I made this cake for my husband’s birthday about a month ago. He gave me the idea of using chocolate and orange. The result of his idea was really really good.

This dark chocolate cake is made with good quality cocoa powder, oil, orange extract, orange juice and other goodies. It’s filled with orange marmalade and covered with orange flavored white chocolate ganache.

Sigh of Lima (Suspiro Limeno)

This Peruvian dessert is one of the most popular specially during the holidays like Easter. The base is a creamy mixture made with sweetened condensed milk, evaporated milk and eggs. It’s topped with a delicious meringue that you can add Port wine but because I want this dessert to be kid friendly I will omit the wine.

It is usually served in individual containers that is why I’m making them in 4 oz. Mason jars. This dessert doesn’t need to be baked in the oven. You can make this dessert in smaller glasses too because it’s a rich dessert and you don’t need a big serving.

Raspberry Cobbler

Happy Monday! I had a big bag of frozen raspberries so I thought it was a good time to use them for a cobbler. Raspberries and chocolate are a great combo so I decided to make dark chocolate biscuits to be the topping.

Churro Cookies With Homemade Dulce De Leche Filling

I’ve been thinking about this recipe for a long time. As you know, I’m from Lima-Peru so one of my favorite treats growing up were churros filled with dulce de leche.

Today, I’m showing you how to make baked churro cookies filled with homemade dulce de leche. This homemade dulce de leche or “manjar blanco a la olla” is very popular in Latin American countries.
