Snickerdoodle Banana Bread

Hi everyone! I have been mia for some days because I got sick and was not feeling very well. Weather is finally cooling off (hopefully it stays that way) so it’s perfect time for you to start baking delicious breads that pair perfect with a nice warm cup of coffee/tea.

Bananas and cinnamon have always been great friends that is why I came up with this new version of banana bread with lots of cinnamon and sugar, so why not calling this recipe “Snickerdoodle Banana Bread”.

Let’s start with the recipe!

Ingredients

For the pan

2 tablespoons white granulated sugar

1 teaspoon cinnamon

For the bread

2 and 1/2 cups all-purpose flour

1/2 tsp salt

1 and 1/2 tsp baking soda

1 cup light brown sugar

3 -4 ripe bananas, mashed

1/2 cup white granulated sugar

2 large eggs, at room temperature

2 and 1/2 teaspoons vanilla extract

1/3 cup vegetable oil

For the cinnamon sugar

3/4 cup white granulate sugar

2 tablespoons cinnamon

Directions

1.- Preheat oven to 350 F.

2.- Cinnamon sugar (for the pan): In a bowl mix 2 tablespoons of white granulated sugar and 1 teaspoon of cinnamon, mix . Grease your loaf pan and sprinkle this cinnamon sugar mix over the greased loaf pans. Make sure you coat all sides.

3.- In a bowl mix all dry ingredients: flour, salt and baking soda. Set aside.

4.- In another bowl mix granulated sugar, light brown sugar, oil, vanilla, eggs and mashed bananas.

5.- Mix wet ingredients into the dry ingredients and mix slowly just until blended. You’ll see a few lumps still but that’s ok.

6.- Pour half of the batter into prepared pan. Sprinkle some cinnamon sugar (about 1/4 cup) and then add the other half of the batter. Sprinkle more cinnamon sugar on the top.

7.- Bake bread for about an hour or until just a few crumbs sticks to a toothpick. If you see that the top of your bread is getting too dark, grab a piece of foil and cover the top so your bread continues cooking but the top doesn’t brown more.
