Apple Cinnamon Cake Loaf

 

I know it has been a while since my last post. My dad passed away unexpectedly almost 2 months ago and as you might know I was very close to him. Grieving the loss of a parent is hard and I have been taking my time to assimilate what happened.

But, I’m trying to return to my regular baking and blogging. Thanks to everyone who have reached out to me during this difficult time.

So, let’s start baking and as you know Fall season is my favorite time of the year and being just around the corner, I decided to bake something to start celebrating. I had 2 sad apples and some leftover apple sauce in the fridge, there was no way I was going to toss it away so I made this delicious, quick and easy cake that is perfect for Fall or anytime of the year.

Ingredients

For the apple filling

1 and 1/2 cups apples (peeled and diced in small pieces)

1/3 cup brown sugar (it can be light or dark)

1 and 1/2 teaspoons ground cinnamon

For the cake batter

1 and 3/4 cups all-purpose flour

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon baking powder

1/2 teaspoon ground baking soda

1/4 teaspoon salt

1/2 unsalted butter at room temperature

3/4 cup white granulated sugar

2 large eggs at room temperature

1/3 cup unsweetened apple sauce

1 teaspoon vanilla extract

1/2 cup milk (any milk you prefer)

Directions

For the apple filling

In a bowl mix apples, sugar and cinnamon. Set aside.

For the cake batter

1.- Preheat oven to 350 F. Grease the bottom and sides of the loaf pan ( 9×5)  with softened butter. Set aside.

2.- In a small bowl mix all the dry ingredients: flour, cinnamon, nutmeg, baking powder, baking soda and salt.

3.- In another bowl and using an electric mixer, mix your butter until creamy for about 2 minutes. Then, add sugar and keep mixing in medium high speed for another 2 minutes.

4.- Add in eggs, one by one mixing well after each addition. Add vanilla extract. Add apple sauce. At this point, you will see that the mixture is curdled and it’s totally ok.  Now, add the dry ingredients and mix in low speed until you don’t see any leftover chunks of flour.

5.- Pour half of the bater into the prepared pan. On top of that batter, add the apple filling. Pour the other half of the batter.

6.- Now, it’s time for some swirling. You can use a knife or a stick and make swirls, do not be scared of this step, be sure to swirl good!

7.- Bake for about 60 minutes. After 45 minutes, check if the top of the cake is too brown. Grab a piece of foil and cover the top and keep baking until it’s completely baked.

8.- Let it cool completely. Take it off of the pan and slice.
