Best Orange Loaf

Happy Monday! I bought some oranges last week and last night they were looking a bit sad, so I decided to bake something quick before they turn bad. This cake is perfect if you want a quick and easy bake. It has orange juice and zest which give a nice citrus flavor. Also, I am showing you how to make that nice line on top that bakery loaves have: you just need melted butter and a knife.

Yield one loaf pan

Ingredients

1/2 cup unsalted butter, room temperature

1 cup white granulated sugar

2 large eggs, room temperature

1/2 cup plus 3 tablespoons fresh orange juice

orange zest, from 2- 3 oranges

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 tablespoon unsalted butter, melted and cooled

Directions

1.-Pre-heat oven 350 F. Grease a loaf pan with softened butter or cooking spray. Set aside.

2.- Beat butter for 2 minutes until fluffy. Add sugar and beat for 1 more minute.

3.- Add eggs, one by one, mixing well after each addition.

4.- Mix in juice and zest. Mix. By this step, the batter will curdle, but don’t worry, it will all come together.

5.- Mix all dry ingredients and sift them together. Add dry ingredients to the orange mixture until just mixed.

6.- Pour batter into prepared pan.

7.- Using a knife make a line the center of the cake (lengthwise). It does not need to be too deep. Pour the melted butter into that line you just made.

8.- Bake bread for 50 minutes. Always check the top of the bread isn’t turning too dark. If this happens, grab a piece of foil paper and cover it and finish baking.

9.- Bake until you insert a toothpick, or a knife comes out clean. Let it cool completely in the pan and then plate it on your favorite dish. You can dust some powdered sugar on top. Enjoy.

    Okay, the house smells fantastic while baking it! I didn’t have enough granulated sugar left after the holidays, but a ton of brown sugar. So I subbed the light brown sugar, and it turned out delicious!!! I did add a little glaze made with some extra orange zest, half of a left over orange squeezed and about a 1/2 C powdered sugar. Wow! We had a little taste tonight, but it’s our breakfast cake with coffee tomorrow morning. Thanks so delicious, I love orange essence and it’s moist kind of coffee/tea time perfect.
