Happy National Coffee Day! Let’s celebrate by making this super quick recipe for a delicious latte! The thing that I like the most about making my own pumpkin spice latte at home is that I can adjust the sweetness and there is no need to use syrups at all. This recipe works with natural sweeteners too.

Yield one serving
For the latte
1 cup milk
2 tablespoons pumpkin puree or to taste (not pumpkin pie filling)
1 or 2 tablespoons light brown sugar or to taste
1 teaspoon vanilla extract
1/2 teaspoon pumpkin pie spice
1/2 cup hot brewed coffee or 2 espresso shots if you are using a coffee maker
pumpkin pie spice or ground cinnamon
1- In a small saucepan, mix milk, pumpkin puree and light brown sugar. Cook over medium heat, stir until it is hot and steam BUT NOT BOILING. Turn off the heat.
2.- Add in pumpkin pie spice and vanilla. Mix. Add in hot coffee and keep mixing.
3.- Pour this mixture into your cup. Taste it and see if it needs more sugar. Top with whipped cream, cinnamon or more pumpkin pie spice.
