Tiramisu Cake

Happy New Year!! I’m back after some days of not baking at all. I hope you all are doing well and that we all have a better year.

January is my birthday month. I’ll turn 38 on the 14th. I was hoping to spend my birthday in Peru with my parents but again… COVID gets in the middle of my plans. I really don’t have any plans for my birthday so I decided to bake a couple of cakes during January to celebrate.

This cake has 2 soft vanilla cake layers. After baked, I brushed some homemade espresso syrup on top. Covered with a delicious espresso mascarpone cream filling and frosting.

Champagne Cupcakes

Hello guys! Happy Tuesday! This is my last recipe for 2020 and I think it fits perfectly to welcome the new year. I baked with champagne before but I never got enough taste of it so I decided to make a champagne reduction for the cupcake batter and frosting and guess what! It worked really good.

The mini cakes are soft and fluffy with a good taste of champagne. The frosting is a light whipped cream frosting made with fresh raspberry puree and champagne reduction.

After this post, I will take a break from baking but I’ll be back with a new recipe very soon. Happy New Year! I hope that 2021 is better for all of us. Stay safe and don’t forget to wear your mask. Cheers!

Crème brûlée

Just a few more days to end this crazy 2020. I don’t know about you but I’ll spend New Years Eve at home, watching tv and cooking something with my husband and dessert is something in our menu for sure.

Crème brûlée is a great idea for New Years because it looks festive/fancy, doesn’t need a lot of ingredients and is super easy to make.

Oh! I forgot to mention that I’m using gold paper cups (my sister in-law gifted them to me, thanks Nancey!) BUT if you do the same be careful when you use your kitchen torch. You can safely use regular porcelain/glass ramekins.

If you have never made crème brulee before, I recommend using glass/porcelain ones.

White Chocolate Bourbon Gingerbread Bars

Happy Monday! When my friends at Four Roses asked me if I wanted to be part of their holiday collab, I said YES! We always have Four Roses Bourbon at home and I love baking with it.

This recipe is super quick and delicious, perfect for the holiday season because it has spices, molasses, chocolate and a good splash of bourbon.

Dulce de Leche Cones

These treats are perfect for your Christmas cookie box or cookie swap because they are different than your regular cookies, taste delicious and they keep well for many days. They taste even better a day or two after making them.  

These cookies have 3 parts: an alfajor cookie base (similar to a shortbread cookie) made with cornstarch, regular flour, vanilla, butter. Then, it has a swirl of dulce de leche. Finally, everything is coated in dark chocolate. They are delicious and very popular in South America specially in Argentina.

Gingerbread Flan

Flan is one of the most popular desserts in Latin America and because Christmas is just around the corner, I decided to bake a flan packed with spices, perfect for the holiday season. 

The caramel AND custard have spices like cinnamon, ginger and nutmeg.  Every bite will make you think of gingerbread.

Walnut Linzer Cookies

Linzer cookies are my favorite cookies for Christmas. They are so pretty and delicious that you will want to eat them all.

I have some recipes for Linzer cookies here on my blog but I am always trying to come out with different ideas for the cookie dough and filling AND today, I want to show you how to make the cookie part with toasted walnuts. Filling is just a raspberry jam which is delicious with the nutty flavor of walnuts.

Chocolate Peppermint Cookies

Last week when I went grocery shopping I found these Candy Cane Hershey’s Kisses chocolates. I’ve never had them before, so I bought them to make cookies!

These cookies are VERY easy to make, you just need to chill your dough in the freezer for some hours so they can have the right texture when baked. Made with dark cocoa powder, vanilla and peppermint extract and other simple ingredients. They are coated in granulated sugar and have a peppermint Hershey’s chocolate in the center. SO yummy! The outside is a bit crispy but the inside is very very soft!

Grapefruit Bundt Cake

Christmas is just around the corner and one of the things I love the most is to host this holiday in my home. This year will be a little different but I will make sure to have a great dessert and drinks. 

I like to set up a dessert table with different cookies, a couple of Bundt cakes and of course panettone which is an Italian bread that I love to eat since I was a kid. This year, I decided to create something with grapefruit and the result is amazing!

This Bundt cake is packed with grapefruit flavor: zest, fresh juice and Malfy Rosa which is an Italian gin that highlights fresh citrus, grapefruit and juniper. The glaze is the final touch for this delicious cake made with powdered sugar, fresh grapefruit juice and Malfy Rosa. 

And because a great cake deserves a good drink, I made a grapefruit spritzer, perfect to refresh yourself during the busy holidays. Made with Malfy Rosa, grapefruit juice and sparkling water.
