Pantry Cookies

I always have snacks at home like dried fruit, nuts and chips. Also, because of my baking I have different kinds of chocolate chips and chunks.

Today, I decided to show you how to bake one of my favorite treats that I make with goodies that I always have in my pantry.

Yield about 2 dozen regular size cookies

(You can double the ingredients if you want to make more cookies)


1 cup plus 2 tablespoons all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, room temperature. NOT HARD OR MELTED

6 tablespoons light brown sugar

6 tablespoons white granulated sugar

1 egg, room temperature

1 teaspoon vanilla extract

1/2 cup milk chocolate chips

1/2 cup semi sweet chocolate chunks

1/3 cup salted or unsalted peanuts

1/3 cup walnuts, chopped in small pieces

3/4 potato chips, any kind you prefer, crushed into small pieces

1/3 cup dried cherries


1.- Preheat oven to 375 F. Line your cookie sheets with parchment paper. Set aside.

2.- In a small bowl, mix all-purpose flour, baking soda and salt. Set aside.

3.- In a bowl of an electric mixer beat butter for 2 minutes. Then, add both sugar and mix for about 3 minutes until light and fluffy.

4.- Add in egg and mix for 1 more minute. Add vanilla and mix for 30 seconds.

5.- Add your dry ingredients and mix in low speed until well combined.

6.- Add chocolate chips,chocolate chunks, dried cherries. Mix for 20 seconds. Add in walnuts, peanuts. Mix for 20 seconds.

7.- With a spatula fold the crushed potato chips very careful.

8.- Cover the cookie dough and refrigerate it for 3 hours at least. I refrigerated mine overnight. Next morning my dough was very cold so I just let it sit so it

Refrigerating your dough is good because it will make your cookies a bit puffy and not flat.

7.- When ready to bake, make cookie balls with the palms of your hands and place them on your prepared baking sheets. Always leave good space between them because they will grown/spread a bit.

Store your cookies in a container with a lid or a big ziplock bag. Don’t forget to cool them completly first.
